                                                       Scones

Scones are a popular mainstay of afternoon tea.  The word scone comes from the Gaelic word sgoon.  The basic scone recipe can be added to by using sultanas, cheese or treacle.

Ingredients

225g/8oz self raising flour
55g/2oz butter
25g/1oz caster sugar
150ml/5fl oz milk
A pinch of salt

Cheese Scones - 25g/1oz grated  cheese
Mix in the cheese after rubbing the butter and flour together

Sultana Scones - 25g/1oz Sultanas
Mix in the sultanas after rubbing the butter and flour together

Treacle Scones - 2 tablespoons of treacle.  Mix in the treacle after rubbing the butter and flour together, and along with the sugar and milk.



Method

Preheat the oven to 400F/200C/Gas Mark 6.  Place the butter and flour in a baking bowl.  Rub them together until they resemble breadcrumbs. Add the sugar and salt  and mix well.  Beat the egg.  Pour in the milk and add the beaten egg.  Mix until you have a soft, elastic dough.

Turn out onto a floured surface and roll to about ½ inch thick. Cut into small rounds with a cutter about 1½ inches in diameter. Bake for 10-15 minutes.  

Serve warm or leave to cool.  Store in an airtight container.
