Method
Mix the oatmeal, salt and bicarbonate of soda. Pour the melted fat into the centre of the mixture. Using a large wooden spoon, stir well, adding enough water to make into a stiff paste. Cover a surface in oatmeal and turn out the mixture. You should work quickly as the paste becomes difficult to work with as it cools.
Divide the mixture into two. Roll one half into a ball and knead with hands covered in oatmeal - it prevents sticking. Roll out to around 1/4inch/1/2cm thick. Place a plate which is marginally smaller than the size of your pan over the flattened mixture. Cut to leave a circular oatcake.
Cut the oatcake into quarters and place in the lightly greased heated pan. Cook until the edges curl slightly and then cook the other side. The first side should take approximately three minutes, the reverse side slightly less time. Serve with butter or syrup.
